Beef Mince Curry
This is one of my original recipes that I make when I need something relatively easy.
For the past five years or so, we have been making our own mince - store bought lean mince still contains an unbelievable amount of fat. By using a suitable roast cut, we can trim as much of the fat off the roast as we want.

Ingredients
- Minced beef
- Chopped onion/leek
- ½ tsp Ground ginger (you can use use fresh ginger)
- ½ tsp Ground coriander
- ¼ tsp Fennel seeds
- 2 tsp Rajah Mild and Spicy Curry powder
- ½ tsp Dried crushed chilli (or more for more bite)
- ½ tin Chopped tomatoes
- 2 tsp Apricot jam
- 1 Tbsp Chutney (Mrs Ball's Original works well)
- Suitable veggies such as cauliflower or baby marrows (optional)
Method
Fry the onions/leeks in oil with the fennel until the onions start browning.
Add the spices and mix in well. Let them fry for a couple of minutes.
Move the onions/leeks to one side of the pot and brown the mince.
Add the tomatoes and mix. Add some stock or water at this stage.
Add the jam and make sure to mix it in well.
Simmer on a low heat until the tomatoes start breaking down.
If you are adding veggies, do so now.
Once the veggies are ready, add the chutney and let it simmer for a minute or two.
Serve on a bed of rice with chutney and sliced banana as a side.
