Brendon's chicken marinade
This was a recipe that Brendon and I (mainly Brendon) put together to spit roast deboned chicken thighs in a Weber Kettle Braai. We had to use ingredients mainly from his Mom's larder.
The quantities in this recipe are enough to marinate chicken pieces for six people.
Ingredients

The ingredients
- 2 150g tubs of plain yoghurt
- 1 tsp mild spicy curry powder (Rajah)
- ½ tsp ground coriander
- ½ tsp ground ginger
- ¼ tsp ground cumin
- ¼ tsp ground turmeric
- 1 tsp Robertson's chicken spice
- 2 tsp freshly chopped parsley
- 1 tsp freshly chopped garlic (optional)
- A dash of lemon juice
- Salt
Method
Mix the ingredients thoroughly in a large bowl.
Add the chicken and coat well.
Allow the chicken to marinate for at least two hours.
Braai on a low heat, turning regularly, until the chicken is a nice golden brown. Any left-over marinade can be used to baste the chicken.
