Durban Masala
This is a masala blend from South Africa. It is usually a pretty hot, red masala. The company Simpli Spices makes a Durban Masala, which I found quite tasty, but my local supermarket does not stock it anymore. This meant I had to ask Google for help in finding a recipe.
I found a few recipes, but the one that appealed to me the most was the one from The Spruce Eats. I use this recipe almost as is.
Ingredients
- 6 tsp mild chilli powder
- 1 tsp cayenne pepper
- 1 tsp ground coriander
- ½ teaspoon ground cumin
- ½ tsp ground cardamom. Here, I use the seeds from 1 tsp of cardamom pods.
- ½ tsp ground cinnamon
- ½ tsp fenugreek
- 1 teaspoon ground ginger
- a pinch of ground cloves (I am not very fond of cloves)
I usually start by grinding the fenugreek as it is pretty hard. Once it is almost ground, I remove from the mortar and put it in a separate bowl. I then grind any other whole spices and add them to the fenugreek. Once everything is ground, I pour everything back into the mortar and grind everything together to mix it.
I store this in a small airtight bottle with the hope that the volatile oils from the masala do not dissipate too quickly.
