Honey Mustard Chicken
Here are two similar recipes which I have lumped together on one page.
Most honey mustard chicken recipes out there require baking in an oven, and I try to avoid using the oven as far as possible, so what I have done is to turn these two recipes into stews.
The first recipe is one of those recipes where I did not save the link, so I cannot acknowledge the original author.
Ingredients
- Chicken breasts - sliced into strips
- Finely chopped small onion
- ½ tsp Ground ginger (you can use use fresh ginger)
- ½ tsp Ground coriander
- 2 Tbsp honey (or 2 Tbsp brown sugar if you don't have honey)
- ½ cup water (or chicken stock)
- 75 ml uncooked rice which must be partially cooked beforehand
- 2 Tbsp red wine vinegar
- 2 tsp Dijon mustard
- Veggies
Method
Fry the onions/leeks with the spices.
Move the onions/leeks to one side of the pot and brown the chicken.

Brown the chicken
Add the water/stock, stir and bring to the boil.

Add the stock
Add the veg and cook until almost done.

Add the veg
Add the honey (or brown sugar), mustard and red wine vinegar and stir gently.
If you are using sugar, simmer until the sugar has dissolved.
Add the rice and simmer until rice is ready (add a bit of water if necessary).

Beer and Mustard Chicken
This recipe is based on a Honey Beer Chicken Thighs recipe which popped up in my newsfeed. It is quick and easy to make.
Ingredients
- Chicken breasts - sliced into strips
- Chopped onion
- 1 heaped tsp ground paprika
- ½ tsp oreganum
- ½ tsp thyme
- 1 Tbsp honey (or 1 Tbsp brown sugar if you don't have honey)
- ½ cup beer
- 1 Tbsp Soy sauce
- 1 heaped tsp wholegrain mustard
- Veggies
Method
Fry the onions with the paprika.
Move the onions to one side of the pot and brown the chicken.
Once the chicken has browned, mix in the onions.
Add the oreganum and thyme, mix as evenly as possible into the chicken/onion mix.
Add the beer, stir and bring to the boil.
Add the soy sauce, mustard and honey/sugar. Stir to mix.
Simmer until the sauce has reached the required consistency (don't let it get too dry).
You can add veggies, such as leeks and baby marrows while the sauce is thickening.
Serve on a bed of rice.
