Oatmeal Cookies
This recipe is a variant on my Spent Grain Cookies for those occasions when there is no spent grain (the horror - no homebrew!).
This recipe has been modified to include metric measurements which differ slightly from the original.
Ingredients
- 1 cup (250 mL) rolled oats
- 1 cup (250 mL) crushed bran
- 1 cup (200 mL) cake flour
- ½ cup (150 mL) brown sugar
- 1 tsp (5 mL) baking powder
- ½ tsp (2.5 mL) salt
- 5 Tbsp (75 mL) melted butter
- 1 egg
- 1 tsp (5 mL) vanilla extract
- ½ tsp (2.5 mL) ground cinnamon
- ¼ tsp (1.25 mL) mixed spice
- ¼ tsp (1.25 mL) ground nutmeg
- ½ cup (125 mL) sunflower seeds or chopped pecan nuts
Method
Cream the butter and sugar.
Add the egg and vanilla then beat to combine.
In a small bowl, combine flour, baking powder, salt, and spices.
Add flour mixture to butter mixture and beat until combined.
Fold in oats, bran and sunflower seeds (or pecan nuts).
Place 1 Tbsp scoops of the mixture onto a greased baking tray (what we have found to work very well are cup-cake holders to help the cookies keep their shape).
Bake at 160°C for 20 minutes. The cookies should be crunchy on the outside and soft inside.
