Potato and Hake Frikkadels
I got the idea for this recipe while watching an episode of Mary Berry's cooking show on Britbox.
Ingredients
- 4 small or 2 large potatoes
- 2 leeks sliced (onion is ok)
- ¼ red pepper diced
- 2 smallish hake fillets (170g tin of tuna works as well)
- ½ tsp Dried ginger
- ½ tsp Ground coriander
- 1 teaspoon Dijon mustard
- 2 heaped Tbsp mayonnaise
- ½ cup frozen peas (optional)
- Salt and Pepper
Method
Cook potatoes until soft (microwave is ok).
Fry onion/leeks and red pepper until softish (add the ginger and coriander while frying).

Cook hake until almost done (for microwave cooking, I cook for 40s at 40% three times turning after each 40s period - don't cook too fast).
Microwave the peas in a covered dish for two minutes on full power.
Mash the potatoes and mix in the mustard and mayonnaise.
Fold the onions/leeks and red pepper into the mash.
Add salt and freshly ground pepper.
Flake the hake onto the mash.
Now gently fold the hake and peas into the mash - you don't want to mash the peas.
Place the mash on a board and shape it into four frikkadels.
Fry these in hot oil until golden brown (take care when flipping as they may break).

Fry frikkadels until golden brown
Serve directly from the pan.
