A Rub for Roast Lamb

Rosemary with roast lamb is a winner, but it's not always possible to get fresh rosemary. For this rub, I used dried rosemary leaves.

I use both rosemary and cumin in this rub, so just be aware that too much of either can be overpowering and ruin the taste of your roast.

  • ½ tsp dried rosemary
  • ½ tsp cumin seed
  • ½ tsp ground coriander
  • 1 tsp ground ginger

Method

Grind the rosemary and cumin using a mortar and pestle.

Add the coriander and ginger and mix with the ground rosemary and cumin.

Sprinkle on to the lamb, and gently rub it into the meat with your fingers. Make sure that all surfaces of the have some of the rub.
