Spicy Lamb Stew
This is a recipe that I dreamt up during lockdown. It has become a regular favourite for us.
Although this recipe uses curry powder, it is so mild that you can hardly taste the chilli.
Ingredients
- Stewing lamb (what works well here are knuckles - stewing lamb from a butcher contains bits that you don't really want to eat)
- Chopped onion/leek
- 1 tsp Whole pimento
- ½ tsp Ground ginger (you can use use fresh ginger)
- ½ tsp Ground coriander
- pinch Ground cloves (cloves can be very overpowering)
- 1 tsp Rajah Mild and Spicy Curry powder
- 1 cup Mutton Stock
- 1 cup Dark beer (I use dregs from my home brew)
- Potatoes
Method
Fry the onions/leeks with the spices.

Move the onions/leeks to one side of the pot and brown the lamb.

Brown the lamb
Once you are happy that the lamb is sealed, add the stock and mix. Then add the beer.

Adding the stock and beer
Simmer on a low heat for a couple of hours. Add the potatoes.

Adding the potatoes
Once the potatoes start getting soft, you can add firm veg such as cauliflower and baby marrows if you wish.
Serve once the veggies are ready.
