Tuna and Mushroom Pasta
This recipe is based on one from an old cookbook sold by Woolies in South Africa.
If you need something quick and easy, this recipe is worth trying.
Ingredients
- Chopped onion/leek
- ½ tsp ground Coriander
- ½ tsp ground Ginger
- 125g - 250g sliced Mushrooms
- ½ - 1 cup Cream
- 170g tin Shredded tuna
- A dash of Lemon juice
- Ground black pepper
- 1 tsp dried Parsley
- Cooked pasta shells (the original recipe calls for butterfly pasta (farfalle), but the shells work better)
Method
Fry the onions/leeks with the coriander and ginger until the onions turn golden.
Add the mushrooms and cook them until they stop producing liquid - keep stirring so they don't burn.

Add the cream and simmer until the sauce starts to thicken.

Add the tuna, lemon juice and black pepper. Mix well then add the parsley.

Drain the pasta and add to the sauce. Mix and allow it to warm up for a minute or two.

Serve with a wedge of avo.
