Beef Frikkadels with a Tomato Sauce
Francois and I created this recipe while discussing lunch over a beer in December 2024. It is a work in progress as the sauce needs some tweaking.
It's quite interesting that Daily Maverick put up a very similar recipe early in January.
Ingredients
Frikkadels
- 300g beef mince (when Pat and I make mince, we normally package it into 300g batches for freezing)
1 egg(we have decided not to use the egg as it tended to make the frikkadel rather hard)- 1 Tbsp general purpose flour
- finely chopped onion/leek
- ½ tsp ground ginger
- ½ tsp ground coriander
- ½ tsp dried mixed herbs (origanum does add more flavour)
Sauce
As this is an exprimental recipe, it will change with time. For instance, on the first try I only used fresh tomatoes, which was not red enough for a tomato sauce.
- Coarsely chopped onion
- ½ tsp ground ginger
- ½ tsp ground coriander
- ½ tsp dried origanum
- 1 chopped tomato
- ½ tin chopped tomatoes
- 1 cup beer
- 1 Tbsp tomato sauce (optional)
- 2 tsp Worcestershire sauce
- Salt and pepper
What does add to the flavour is a pinch of chilli powder and about a tablespoon of Spar Apricot and Chilli Sauce.
Method
Frikkadels
Fry the onions, with the ginger and coriander, until the onons are translucent
Mix the mince, egg, flour and mixed herbs with the fried onons in a bowl.
Roll the mince mixture into golf ball sized balls.
Fry these frikkadels until brown all over.
Browning the frikkadels
Remove from pan and set aside until later.
Sauce
Lightly brown onions together with ginger and coriander.
Add tomatoes, tomato sauce and Worcestershire sauce and mix thoroughly.
Add the beer
Simmer until sauce begins to thicken.
Simmering the sauce
Add frikkadels and origanum.
Gently roll frikkadels in the sauce until they are coated with sauce.
Simmer on low heat until frikkadels have warmed.
Adding the frikkadels to the sauce
Serve on a bed of rice.
