Vegetable Curry

With the rising price of meat one has to look at alternative sources of protein.

Thanks to Bumbi for the ideas used in this recipe.

Ingredients

  • Finely chopped onion/leek
  • 1 heaped tsp Durban masala
  • ½ tsp Ground chilli (add more if you want more of a bite)
  • ½ tsp Ground coriander
  • ½ tsp Ground ginger (you can use use fresh ginger)
  • 1 cup vegetable or chicken stock
  • 2 medium Potatoes diced
  • 2 medium Tomatoes diced (or ½ tin diced tomatoes)
  • ½ tin drained Chickpeas
  • 1 coarsely chopped leek
  • Cauliflower, baby marrows, peas, whatever works for you
  • 1 tsp Garam masala

Method

Fry the onions/leeks and spices until the onions turn golden.

Move the onions to one side.

Add the potatoes and lightly fry for about 5 minutes, stirring regularly.

Mix the onions and potatoes

Add the tomatoes and mix.

Add the stock and bring to the boil.

Simmer for 15 to 20 minutes (the tomatoes will start breaking down).

Add chickpeas, chopped leek and cauliflower and simmer until the cauliflower starts softening.

Add the baby marrows (and peas) stir.

Simmer until baby marrows are soft.

Sprinkle the garam masala over the curry (don't stir) and simmer for a couple of minutes

Mix and serve.

Non-vegetarian Vegetable Curry

Often after a braai, we often end up with leftover boerewors. It's quite nice to snack on cold boerewors, but I thought it would be a nice change to use this wors in a dish. The easiest I thought would be in this vegetable curry.

The ingredients are the same except that I use the boerewors instead of the chickpeas. I also find that the Rajah Mild and Spicy Curry works better with the boerewors than the Durban Masala. I also add star anise with the spices.

If no cooked boerewors is available, I fry the sliced wors in the pot I am going to use, before I start cooking. Once the wors is cooked, I remove it from the pot and drain the excess fat from the pot.

At this stage, add the tomatoes and half of the stock and simmer until the tomatoes start breaking down (about 20 minutes).

Add the rest of the stock and the veggies. I normally add the veggies in stages, with those requiring the longest cooking time first.
